If you know me, you know my love for Indian food. I really -like- REALLY love Indian food. I love to cook it and, surprise, surprise, eat it. Before this recipe, I didn’t cook for a ā€œlongā€ time and thought it was time for me to make another one, and a dahl came to mind. It made me feel like I was doing a risotto, the Indian way! (way better!).Ā  I know, my newest recipes are vegan and you might think, is he turning vegan? But no! Not now! But I do enjoy cooking without dairy product and I, right now, I don’t want dairy. Maybe a step closer to veganism? Who knows! Let’s get to the delish recipe… -Ingredients- 2Ā tbspĀ coconut oil 1Ā mediumĀ onion 2Ā clovesĀ garlicĀ crushed 2 cmĀ gingerĀ finely grated 2Ā tspĀ mustard 2Ā tspĀ garam masala 1Ā tspĀ cumin ground 1Ā tspĀ turmeric 1Ā tspĀ chilli powder 300 gĀ red lentils 900 mlĀ vegetable stock 2Ā tomatoesĀ diced 1-2Ā tspĀ salt Ā  -Instructions- Place a large saucepan over medium-high heat. Add the coconut oil. When the coconut oil melted, add the onion, garlic, ginger and mustard. Cook until the onion is translucent.
