Indian dahl, vegan

If you know me, you know my love for Indian food. I really -like- REALLY love Indian food. I love to cook it and, surprise, surprise, eat it. Before this recipe, I didn’t cook for a “long” time and thought it was time for me to make another one, and a dahl came to mind. It made me feel like I was doing a risotto, the Indian way! (way better!). I know, my newest recipes are vegan and you might think, is he turning vegan? But no! Not now! But I do enjoy cooking without dairy product and I, right now, I don’t want dairy. Maybe a step closer to veganism? Who knows! Let’s get to the delish recipe… -Ingredients- 2 tbsp coconut oil 1 medium onion 2 cloves garlic crushed 2 cm ginger finely grated 2 tsp mustard 2 tsp garam masala 1 tsp cumin ground 1 tsp turmeric 1 tsp chilli powder 300 g red lentils 900 ml vegetable stock 2 tomatoes diced 1-2 tsp salt -Instructions- Place a large saucepan over medium-high heat. Add the coconut oil. When the coconut oil melted, add the onion, garlic, ginger and mustard. Cook until the onion is translucent.
