This recipe is a spin on the traditional Spanish dish, tortilla de patatas. The added baby spinach and red bell pepper make the dish more flavorful, filling and nutritious. This dish is very versatile and can be served hot or cold and works well as a main dish or an appetizer. This recipe is adapted from my blog delicious in a dash.
There's nothing too fancy about this rustic Spanish style omelet, just lots of hearty goodness from crispy fried potatoes and onions. Chopped tomatoes and green onions lend even more flavor and color.
This Spanish Tortilla is really just a Spanish omelette -- made with sliced potatoes, onions and peppers fried together before being topped with beaten eggs and baked. It's perfect festive holiday breakfast!
